It has been a welcome return for Justin Quek, chef extraordinaire of Les Amis who went further afield in Shanghai and Taipei, before finally returning after seven years to his home island of Singapore. This time, however, the chef, who is most famous for fine French cuisine, has a whole new bag of treats at his Sky on 57 restaurant, perched on one end of the award-winning Sands SkyPark of Marina Bay Sands.
Here, in this 12,000 sq ft all-day restaurant, the panoramic views of the city will indubitably come second to the food once it reaches the table. At Sky on 57, Quek’s inventive genius takes on Modern Asian cuisine, a reference to the outlandish fusion of Asian traditional dishes and the European techniques used in Quek’s creations.
“This restaurant showcases my Asian upbringing and the comfort food that I grew up eating, but I’m adding a modern interpretation to bring it to a higher level,” says the avuncular Quek who recently demonstrated his culinary finesse at the Visa 2011 Premium Access introduction, which lists Marina Bay Sands as one of the programme’s participating partners. Today, he’s been the proverbial bee, rushing from one table of diners to the next, all the while buzzing with enthusiasm and delight at the feedback received.
“In the time I’ve been away, my thinking has changed,” Quek states as he finally settles in his chair. “Asians are now people who have an international outlook and, for me, it’s the right timing to go Modern Asian, which is a fine balance of both worlds.”
